ice is a popular staple in easy and or budget dishes. This quick side dish gets even better when it is tomato rice. Due to the addition of the tomatoes it is even easier to get your daily veggies in! Due to the special way it is prepared it is never dry. It’s a basic dish you can vary endlessly with.

t first the way how this tomato rice is prepared can seem quite hard and maybe make you feel a tad nervous. But I assure you that when you have done it once it’s super easy. If you have made risotto before it probably already feels familliar.

The secret of this dish is that you cook the rice in all the ingredients with only a little water. You keep stirring and when needed add water or broth until the rice is done. In this way all the nice aromas from the vegetables, herbs and spices get absorbed by the rice giving a tomato rice with depth.

Every time while cooking and it getting to dry you only add a half tea glass of water or broth. Depending on your personal taste of how dry or wet you like your rice, and the type of rice, this amount of liquid can be different than the recipe states.

In the pictures I used the most cheap budget white rice. But every rice will work.

or the many variations that are possible I made a handy roster of which spices, fresh or dried, you could add. This is a great dish by the way for people that like to eat as little salt as possible. Due to the tomatoes that are umami the rice keeps being incredible tasty without salt.

Turkish and Maroccan kitchen:Mint. Black pepper.
Indian and Surinamese kitchen:‘Curry’ or Garam Masala. Adjuma pepper.
French or Italian kitchen:Basil, thyme and oregano.
Danish, Swedish and Norse kitchen:Dill.
Mexican kitchen:Cumin. Green or red peppers.
Spanish kitchen:Smoked paprika powder.

A clove of garlic also tastes great in this tomato rice. Leftover herbs and vegetables like chives, parsley, grated celery, carrot, bell peppers, tubers and leafy greens can also be added. Add this when you are cooking the tomatoes.

Ingredients

  • 75 grams 1/3 cup Rice

  • 150 ml 5 1/8 fl oz Water or Broth

  • 1 1 Tomato

  • Salt (optional)

Directions

  • Mince the tomato.
  • Add the tomato to a pan with the optional salt, garlic, peppers and vegetables. Add as much from the water/broth until it is all under water. Cook until the skin of the tomatoes is starting to let go.
  • Add the rice and the rest of the water. From this moment on you have to keep stirring and adding little bits of water if it gets too dry. Keep doing this until the rice is done.
  • Add optional salt, herbs and pepper.
