eah this has a funny name. Let’s get that out of the way first. Naked goat balls in the grass is based on a Dutch dish called ‘Blote billetjes in het gras’ which translates to naked butt cheeks in the grass. The original dish is white beans mixed with chopped green flat beans. Two white beans next to each other look like butt cheeks from a white person. And the chopped flat beans like grass. It’s nothing special but kids love the cheeky name and it makes them eat their vegetables better. Since this version has goat’s cheese in it; it should be goat’s butt cheeks. But goats don’t have butt cheeks like we do. But their balls dó exactly look like two beans.

nough about butt cheeks and balls; let’s talk ingredients. Like most recipes on my website this is again a budget friendly recipe. It’s also lacto-vegetarian. It’s incredibly simple and quick to prepare. You can eat this dish cold too. This means that you can also take it to your work or a picnic or a BBQ/cookout as an side dish.

Beans: For this dish I used giant white beans. I like their texture the best. Gigantes, or Greek giant beans are the best for this. But smaller white beans will work too. I’m not really a fan of cannelini beans for this dish because they have a thicker skin, the same goed for using dried white beans.

Things you can add to this dish: Parsley, chives, walnuts, pine nuts and beech nuts. Bacon bits but it’s not vegetarian then anymore of course.

  • 200 grams 7/8 cup White Beans

  • 1 ts 1 ts Smoked Paprika/Chili Powder

  • 50-75 grams 1/4 cup Soft Goat Cheese

Directions

  • Cut the spring onions in rings and the garlic in pieces. Put them in a pan with water until they are covered half. Cook this.
  • If the garlic is done add the white beans and the optional salt. Add water if you think it’s too dry, let it cook to evaporate water if you think it’s too runny.
  • Turn of the fire and mix in the smoked paprika/chili powder. Add salt and pepper to taste. Garnish with the goat cheese.
